Baby Beef Wellingtons
- 600g eye-fillet of beef, cut into 4 even-sized pieces Safeway 1 lb For $5.99 thru 02/09
- 20g butter
- 2 teaspoons KRAFT Bonox
- 1 tablespoon finely chopped thyme
- 1 cup finely chopped button mushrooms
- 1 packet (125g) chicken liver pate
- 375g packet puff pastry
- Heat the oil in large pan; add beef; cook until browned all over.
- Remove from pan and cool.
- Add butter, Bonox and thyme to the same pan and cook the mushrooms until tender.
- Cool
- Spread the pate thickly and evenly over beef.
- Top with the mushroom mixture, pressing firmly to stick to pate.
- Wrap the pastry around individual fillets; press edges to seal and enclose.
- Place seam side down on a greased oven tray.
- Bake at 200 degrees C for 20-30 minutes or until pastry is golden brown.
- Serve immediately.
