Fried Quail

  1. Wash quail& wipe dry.
  2. Rub with salt& pepper.
  3. Mix breadcrumbs& Parmesan cheese together.
  4. Dip quail in beaten eggs, then breadcrumb mixture.
  5. Fry in hot oil until quail is tender and browned on all sides.
  6. Serve garnished with lemon and parsley if desired.
