Summer BBQ Salad
- 3 cup cooked chicken, chopped
- 2 ear corn on the cob, cooked and kernels removed, or 1 cup frozen or canned
- 3/4 cup black beans
- 1 red pepper, chopped
- 1/2 red onion, chopped
- 1/4 cup cilantro, chopped
- 1/2 cup ranch dressing or mayonnaise
- 1/2 bbq sauce
- 1 lime
- 1 salt and pepper to taste
- 1 avocado, tomato, jalapenos, tortilla chips optional
- Add chicken, corn, beans, red pepper, onion and cilantro to a large bowl
- In a separate bowl, mix ranch and bbq sauce
- Add sauce to chopped chicken and vegetables, mix
- Squeeze lime juice over, mix
- Salt and pepper to taste
- Optional ingredients: chopped avocado, tomato or jalapenos
- Optional: Serve in avocado halves, hollowed out tomatoes or with tortilla chips
