Long Island Iced Tea
- 1/4 cup sugar
- 1/4 cup water
- 1/2 teaspoon grated lemon rind
- 2 tablespoons gin
- 2 tablespoons light rum
- 2 tablespoons white tequila
- 2 tablespoons vodka
- 2 tablespoons Triple Sec
- 1/2 cup cola beverage
- 2 lemon or orange slices, for garnish
- In a small saucepan combine the sugar, water, and lemon rind.
- Bring mixture to a boil and cook, stirring, for 1 minute, or until the sugar is dissolved.
- Remove from the heat and cool.
- Strain and discard lemon zest.
- Combine gin, rum, tequila, vodka, triple sec, and the cooled lemon simple syrup in a cocktail shaker filled halfway with ice cubes.
- Shake well.
- Strain into 2 ice-filled Collins glasses and top with the cola.
- Gently stir to combine.
- Garnish with fruit slices and serve immediately.
