Veggie Fried Rice

  1. Heat 1 Tbsp oil in large skillet over medium-high heat.
  2. Add the frozen vegetables and garlic and cook until heated through, 3 to 4 minutes.
  3. Transfer to a bowl.
  4. Wipe out the skillet and heat the remaining oil over medium-high heat.
  5. Add the cooked rice and scallions and cook until heated through, 1 to 2 minutes.
  6. Push the rice to the sides of the skillet and pour the eggs into the center.
  7. Using a spatula, scramble the eggs until set, then stir into the rice.
  8. Return the vegetables to the skillet.
  9. Add the soy sauce and vinegar and toss to combine.
