Hearty Beef Vegetable Soup Recipe

  1. Heat oil in a large heavy saucepan or possibly Dutch oven over high heat.
  2. Crumble in meat; add in garlic, salt and pepper.
  3. Cook 2 min, stirring 2-3 times, till meat loses its pink color.
  4. Stir in remaining ingredients and bring to a boil.
  5. Reduce heat.
  6. Cover and simmer 3 min till vegetables are warm.
  7. Yield: 4 (1 c.) servings.
