Cottage Cheese Pancakes

  1. Preheat skillet to medium heat.
  2. Mix cottage cheese, 3 eggs, and flour in a bowl.
  3. When skillet is preheated, pour a small amount of batter onto the skillet.
  4. (They are too hard to flip if you make them large.)
  5. When they look glossy, flip over and cook for 1 minute more.
  6. Serve with orange sauce.
  7. To make the sauce, melt butter in the microwave and mix together with the sugar in a cool sauce pan (without heat).
  8. Add remaining egg, beaten, and mix well.
  9. Turn heat to medium and add the orange juice, zest, and lemon juice while stirring constantly.
  10. Cook over medium-low heat for about 5 to 10 minutes until slightly thick.
  11. Pour over pancakes and enjoy with powdered sugar on top.
