Mystery Bread
- 1 3/4 c. water
- 1/2 c. corn meal
- 2 tsp. salt
- 1/2 c. molasses
- 2 Tbsp. shortening
- 1 pkg. dry yeast
- 1/2 c. warm water
- 4 to 5 c. all-purpose flour
- Combine water, corn meal and salt.
- Bring to boil, stirring constantly.
- Cool until thick.
- Add molasses and shortening.
- Cool until lukewarm.
- Soften yeast in warm water in mixing bowl; add mush and blend well.
- Add flour gradually to form stiff dough. Knead until satiny, about 5 minutes.
- Place in greased bowl, turning to grease all sides.
- Cover; let rise in warm place until double, about 1 to 1 1/2 hours.
- Place dough on surface covered with corn meal.
- Work down and divide into 2 portions.
- Place in greased baking dishes.
- Cover and let rise until double.
- Bake at 350u0b0 for 45 to 55 minutes.
- Makes 2 loaves.
