Spicy Thai Shrimp With Mint Raita

  1. Combine all raita ingredients in a bowl and set aside.
  2. Heat olive and sesame oils in a medium saucepan over high heat.
  3. Saute ginger and garlic about 45 seconds.
  4. Add shrimp and Chile paste, tossing to coat shrimp thoroughly.
  5. Cook shrimp evenly, about 3 minutes.
  6. Add lemon juice and stir.
  7. Serve raita with shrimp.
  8. Garnish with chives.
