Wheat-Free Banana Delight
- 34 cup sugar
- 5 tablespoons vegetable oil
- 3 large eggs
- 2 tablespoons molasses
- 3 large ripe bananas
- 12 cup whole milk
- 1 cup rolled oats
- 1 cup rye flour
- 13 cup teff (Ethiopian grain flour)
- 1 tablespoon baking powder
- 12 teaspoon baking soda
- 12 teaspoon powdered ginger
- 12 teaspoon nutmeg
- 12 teaspoon cayenne
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- Preheat oven to 400F.
- Combine first four ingredients in a large bowl and thoroughly beat, until eggs start to change color.
- Combine banana, oats, vanilla and milk, add to the bowl.
- Mix together all the rest of the dry ingredients, mix into the wet ones, beating well.
- Pour into Pyrex dish or pan
- Bake at 400F for 1/2 hour or until knife come out clean.
- Cool.
