Duchess Potatoes

  1. Preheat oven to 450F and butter a baking dish.
  2. Combine the mashed potatoes, butter and salt with the beaten egg yolks; pipe into balls, hearts, or other shapes using a pastry bag.
  3. Place in dish and brush with slightly beaten egg whites.
  4. Brown in oven.
