Loaded Sweet Potato Fries

  1. Preheat oven to 450 degrees F.
  2. Cut yams into wedges.
  3. Place on a cooling rack on a cookie sheet.
  4. Roast for 30 minutes until cooked and crispy.
  5. Meanwhile, in a skillet add oil, onion, and garlic.
  6. Let bloom 3 minutes.
  7. Add in beans, corn, cumin, pepper, and garlic salt.
  8. Add in a little water if needed.
  9. Stir.
  10. Taste and adjust seasoning.
  11. Once yam wedges are done, remove from oven.
  12. Place wedges on cookie sheet.
  13. Cover fries with bean/corn mixture.
  14. Top with cheese.
  15. Place back into the oven and bake 5-10 more minutes until cheese is melted and bubbly.
  16. Top with purple onion and enjoy!
