Texas Bean Dish
- 1 (16 ounce) can great northern beans, undrained
- 1 (16 ounce) can stewed tomatoes, undrained
- 1 medium yellow onion, peeled and diced
- 1 green bell pepper, seeded and diced
- 2 cups okra, roughly chopped (or green beans)
- 4 small serrano chilies, seeded and minced
- 1 teaspoon cumin
- 1 teaspoon red pepper flakes
- salt and pepper, to taste
- 1 cup colby-monterey jack cheese, grated
- Cook beans in pan until tender/thoroughly heated, then drain.
- Return beans to pan.
- Add tomatoes, onion, bell pepper, okra or green beans, and chillies to beans and stew until onion is tender.
- Add cumin, red pepper flakes and salt & pepper.
- Mix thoroughly.
- Place in casserole dish at 350F for 25 minutes.
- Remove from oven and top with cheese.
- Serve.
