Traditional Fresh Corn Pudding Recipe

  1. Remove husks and silks from corn; cut kernels from cobs (makes about 2 c.).
  2. In a medium bowl combine kernels with sugar, salt, nutmeg and black pepper.
  3. Add in Large eggs, mixing well.
  4. Stir in lowfat milk and butter.
  5. Turn into a buttered 1 qt casserole.
  6. Place in a pan of warm water.
  7. Bake in a preheated slow oven (325 degrees) till a knife inserted in the center comes out clean, about 1 hour.
  8. Yield: 6 portions.
