Sour Cream & Cheese Potato Salad with Bacon
- 2 lb. red new potatoes, quartered King Sooper's 5 lb For $1.88 thru 02/09
- 1/2 cup MIRACLE WHIP Dressing
- 1/4 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
- 1 green onion, chopped
- 1/2 cup KRAFT Shredded Sharp Cheddar Cheese
- 8 slices OSCAR MAYER Bacon, cooked, crumbled Rite Aid 2 For $7.00 thru 02/06
- 2 Tbsp. chopped fresh parsley
- Cook potatoes in boiling water 20 min.
- or until tender; drain.
- Cool.
- Mix dressing, sour cream and onions in large bowl.
- Add potatoes and cheese; mix lightly.
- Refrigerate 3 hours.
- Sprinkle with bacon and parsley just before serving.
