Classic Italian Pasta Sauce

  1. Heat oil in a saucepan over medium heat.
  2. Add garlic, fry for about 3 minutes, and then remove garlic (this just adds a small amount of flavour).
  3. Add onion and fry until soft, about 5 minutes.
  4. Pour in passata/blended chopped tomatoes and salt.
  5. Put the lid on saucepan, lower heat and simmer for 30 minutes.
  6. When sauce is done, stir in fresh parsley and serve with pasta.
  7. It can be stored in a sealed container in the fridge for about 1 week.
