Classic Italian Pasta Sauce
- 150 milliliters Extra Virgin Olive Oil
- 2 cloves Garlic
- 1 Onion
- 1 kilogram Tomato Passata
- 1 Tablespoon Fine Sea Salt
- 2 stalks Parsley, Chopped
- Heat oil in a saucepan over medium heat.
- Add garlic, fry for about 3 minutes, and then remove garlic (this just adds a small amount of flavour).
- Add onion and fry until soft, about 5 minutes.
- Pour in passata/blended chopped tomatoes and salt.
- Put the lid on saucepan, lower heat and simmer for 30 minutes.
- When sauce is done, stir in fresh parsley and serve with pasta.
- It can be stored in a sealed container in the fridge for about 1 week.
