Red and Green Hot Salsa
- 1 md. tomato, diced
- 1 cucumber, peeled, seeded and diced
- 1/2 cup green pepper, diced
- 1/2 cup red pepper, diced
- 1/2 cup good olive oil
- 1/4 cup fresh cilantro
- 1-1/2 tbsp. red jalapeno, minced
- 1-1/2 tbsp. green jalapeno, minced
- Salt, to taste
- Combine all ingredients in a medium bowl and season to taste with salt.
- Refrigerate for at least four hours to let the flavors "marry".
- Serve with your favorite chips.
