Herb-Crusted LambA Simple, Yet Rewarding Way to Eat Lamb.
- 3 tablespoons chopped fresh parsley
- 1 tablespoon finely chopped green onion
- 2 teaspoons finely chopped garlic
- 2 tablespoons olive oil
- 1/3 cup whole-wheat bread crumbs
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon dried thyme
- Salt and ground black pepper to taste
- Four 6-ounce pieces loin of lamb
- Preheat the oven to 425 degrees.
- Combine the parsley, green onion, garlic, oil, bread crumbs, cumin, turmeric, thyme, salt, and pepper on a plate.
- Stir to mix.
- Press the seasoning mixture onto both sides of each piece of lamb and place in an 8-inch square glass baking dish.
- Bake, turning the pieces of lamb once, for a total of 15 minutes for medium-rare doneness or 20 minutes for medium doneness.
