Orange-Pineapple Marmalade

  1. Grate rind from oranges.
  2. Put rind and water into saucepan.
  3. Use orange for another purpose.
  4. Bring to a boil.
  5. Cover and simmer until soft, about 5-10 minutes.
  6. Strain juice into saucepan.
  7. Add sugar and crushed pineapple.
  8. Bring to a boil, stirring often.
  9. Boil rapidly for about 35 minutes, stirring 2 or 3 times, until thick enough.
  10. Cool a teaspoonful on a chilled saucer to see if it jells.
  11. Fill hot sterilized jars to within 1/4 inch of top.
  12. Seal.
  13. Makes 3 half pints and a small jar.
