Lemon Slice
- 1/2 cup Condensed milk
- 100 grams Butter
- 200 grams Granita biscuits
- 1 cup Coconut
- 1 Lemon, rind finely grated
- 1 Lemon Icing
- 2 cup Icing sugar
- 40 grams Butter, softened
- 1 Lemon, juiced
- Grease and line 15.5 x 25cm slab tin.
- Place condensed milk and butter in small pan over medium heat.
- Cook, stirring for 4-5 minutes or until butter melts.
- Crush biscuits in food processor until they are fine crumbs.
- Place crumbs, coconut and 2 teaspoons lemon rind in a bowl.
- Add hot butter mixture.
- Stir until well combined.
- Press biscuit mixture into prepared tin.
- Refrigerate for 1.5 hurs or until firm.
- Lemon Icing.
- Place icing sugar, butter and 2.5 tablespoons lemon juice in a bowl.
- Beat with a wooden spoon until smooth.
- Spread icing over slice.
- Refrigerate for futher 30 minutes or until icing has set.
