Chicken, Berry & Mandarin Salad
- 1-1/2 gal. baby spinach leaves
- 1-1/2 gal. torn mixed salad greens
- 4-1/2 qt. sugar snap peas, trimmed, halved
- 3-3/4 qt. boneless skinless chicken breasts, cooked, chopped
- 3 qt. fresh strawberries, sliced Safeway 1 lb For $3.99 thru 02/09
- 1-1/2 qt. canned mandarin oranges, drained
- 3 cups pecan halves, toasted
- 1-1/2 cups Kraft Raspberry Vinaigrette
- For each serving: Toss 1 cup (250 mL) each spinach and salad greens with 3/4 cup (175 mL) peas, 2/3 cup (150 mL) chicken, 1/2 cup (125 mL) berries, 1/4 cup (50 mL) oranges and about 2-1/2 tsp.
- (12 mL) nuts.
- Drizzle with about 2-1/2 tsp.
- (12 mL) vinaigrette just before serving; mix lightly.
