Cheesy Zucchini Coins

  1. Preheat oven to 450 degrees F. In a large bowl, toss zucchini with olive oil and salt and pepper.
  2. Arrange on rack in 18" by 12" jelly-roll pan; sprinkle with Pecorino Romano cheese.
  3. Roast 25 minutes or until golden brown.
  4. Serve with lemon wedges.
