Potato Salad Extraordinaire!
- 12 lb bacon
- 12 cup sugar
- 2 tablespoons flour
- 2 eggs
- 14 cup vinegar
- 1 cup water
- 12 cup salad dressing
- 2 tablespoons yellow mustard
- 10 medium potatoes
- 12 cup celery, diced
- 5 eggs, hard boiled
- 14 cup onion, diced
- salt and pepper
- Cook potatoes with skin on and set aside to cool.
- Cut bacon into 1/2 inch strips.
- Fry lightly, drain.
- Mix sugar and flour, add eggs and beat to smooth paste.
- Slowly stir in vinegar and water.
- Pour into pan with bacon and cook until thickened.
- Cool thoroughly; add salad dressing, stirring until well blended.
- Peel cold potatoes and dice them into a large bowl with the hard boiled eggs chopped, celery, and onion.
- Add dressing, mustard, salt and pepper to taste.
