Maple Roasted Pears

  1. Preheat the oven to 400F.
  2. Coat a rimmed baking sheet with nonstick spray.
  3. Using a vegetable peeler, peel the skin from the pears.
  4. Slice each pear into 6 wedges and carefully cut out the core with a paring knife.
  5. In a mixing bowl, combine the molasses, sugar, syrup, brandy, and vanilla.
  6. Add the pear wedges, tossing to coat.
  7. Dump the pears onto the baking sheet in a single layer.
  8. Roast for 20 minutes total, turning the pears with tongs halfway through cooking, until they are soft and brown.
  9. Remove from the oven and cool until warm.
  10. Save the caramel left on the baking sheet; its terrific drizzled on ice cream.
