Vegan Chana Masala

  1. Heat oil on medium high heat.
  2. Fry onions until slightly browned.
  3. Reduce heat to medium.
  4. Add garlic, curry, and paste.
  5. Stir and simmer about 2 minutes.
  6. Add chickpeas, reserved liquid, lemon juice, salt, and black pepper.
  7. Simmer 5-6 minutes, stirring occasionally.
  8. Add red pepper, to taste.
  9. Add margarine, stirring through to melt it.
  10. Stir and simmer for 5 minutes more or until chickpeas are softened and dish is hot.
  11. Serve over rice.
