Relish

  1. Put vegetables through medium food chopper or chop in food processor.
  2. Put in crock with 1/2 cup pickling salt mixed with one gallon water.
  3. Let stand overnight.
  4. Drain and squeeze water out. Boil together sugar, vinegar, turmeric, mustard and celery seed. Simmer for 1 hour.
  5. Add ground vegetables.
  6. Bring to a boil and simmer for 10 minutes. Mix 3 tablespoons cornstarch in a little water and cook a few minutes.
  7. Put in sterilized jars.
