Sausage Stew With Red Lentils

  1. Brown sausage over medium heat with onions and celery breaking them into small pieces.
  2. Pour in the water, add pepper, corn and lentils.
  3. Stir all the ingredients, bring to a boil over medium heat, stirring occasionally.
  4. Reduce heat, cover and simmer for 1 hour, stirring from time to time to prevent the lentils from sticking or burning.
  5. Add barley after about a half hour, then remove lid and simmer the other half hour.
