Ww Asparagas Soup 1 Point

  1. In a large pot, melt better on low heat.
  2. Add onion and saute on low for about 2-3 minutes.
  3. Snap the tough ends off the asparagus and disgard.
  4. Chop the asparagus into 2 inch pieces.
  5. Add to the pot with the onions.
  6. Add chicken broth, salt and pepper.
  7. Cover and cook about 20-25 minutes or until asparagus is very tender.
  8. Remove from heat, add sour cream and using your hand held blender, puree until smooth.
  9. In addition, I ran through a chinois strainer (or chinaman's cap) to further smooth the soup.
