Blueberry Spread

  1. In saucepan, sprinkle gelatin over water.
  2. Stir over low heat until gelatin is completely dissolved.
  3. Add blueberries, ginger, sugar, lemon juice and rind.
  4. Bring to a boil.
  5. Cover and cook 5 min or until fruit is tender; stir occasionally.
  6. Spoon into sterilized jars; cool slightly.
  7. Refrigerate several hours or until set.
  8. Store in refrigerator for up to 1 month or for 1 year in the freezer.
  9. Makes 2 cups.
