Blueberry Trail Mix

  1. Preheat oven to 300 degrees F. Line a rimmed baking sheet with parchment paper; set aside.
  2. In a large bowl, add almonds, walnuts and pistachios; set aside.
  3. In a small saucepan over low heat, add honey, oil, chipotle powder, cayenne and cinnamon.
  4. Cook until warmed, stirring well.
  5. Pour the honey mixture over the nuts and stir with a rubber spatula until coated.
  6. Sprinkle salt over nuts and mix until combined.
  7. Spread nut mixture in a single layer on prepared baking sheet.
  8. Bake until golden brown, 20 to 25 minutes.
  9. Remove pan from oven and set it on a rack.
  10. Let it cool completely.
  11. Transfer baked nut mixture to a large bowl.
  12. Add cereal and toss to combine.
  13. To serve, combine 1/4 cup of the nut mixture with 1/4 cup fresh blueberries.
  14. Store nut mixture in an airtight container for up to 1 week (dont add the blueberries when storing it).
