Blueberry Trail Mix
- 1 cup Whole Shelled Almonds, Raw
- 1/2 cups Walnuts, Shelled
- 1/4 cups Shelled Raw Pistachios
- 1- 1/2 Tablespoon Honey
- 1 teaspoon Canola Oil
- 1/2 teaspoons Chipotle Powder
- 1/4 teaspoons Cayenne Pepper
- 1/4 teaspoons Cinnamon, Ground
- 1/2 teaspoons Kosher Salt
- 1 cup Barbara's Original Puffins Cereal
- 1- 1/4 cup Blueberries, Fresh
- Preheat oven to 300 degrees F. Line a rimmed baking sheet with parchment paper; set aside.
- In a large bowl, add almonds, walnuts and pistachios; set aside.
- In a small saucepan over low heat, add honey, oil, chipotle powder, cayenne and cinnamon.
- Cook until warmed, stirring well.
- Pour the honey mixture over the nuts and stir with a rubber spatula until coated.
- Sprinkle salt over nuts and mix until combined.
- Spread nut mixture in a single layer on prepared baking sheet.
- Bake until golden brown, 20 to 25 minutes.
- Remove pan from oven and set it on a rack.
- Let it cool completely.
- Transfer baked nut mixture to a large bowl.
- Add cereal and toss to combine.
- To serve, combine 1/4 cup of the nut mixture with 1/4 cup fresh blueberries.
- Store nut mixture in an airtight container for up to 1 week (dont add the blueberries when storing it).
