Barb's Chicken Recipe
- 1 (10 ounce.) can cream of mushroom soup
- 1 c. lowfat milk
- 1 env. onion soup mix
- 1 (10 ounce.) peas and carrots
- 1 (2 1/2 to 3 lb.) broiler chicken
- 1 (3 ounce.) can minced mushrooms
- 1 c. regular rice
- Stir mushroom soup, lowfat milk and dry onion soup, and liquid removed mushrooms.
- Mix and reserve 1/2 c. of the soup mix.
- Set aside.
- Stir uncooked rice and thawed vegetables into remaining soup mix.
- Turn rice into 12 x 7 1/2 x 2 inch baking dish.
- Arrange chicken pcs on top.
- Pour reserved soup mix over chicken.
- Sprinkle with paprika.
- Cover with foil.
- Bake at 375 degrees for 1 1/4 to 1 1/2 hrs.
