Eggplant Sausage Saute Recipe

  1. Cut unpeeled eggplant into 3/4 inch cubes.
  2. Add in next 7 ingredients.
  3. Cook on stove top or possibly microwave till tender.
  4. Prepare rice.
  5. Fry or possibly broil sausage.
  6. To serve, arrange sausage and cheese cubes on bed of rice; cover with eggplant saute/fry.
  7. Sprinkle with grated cheese.
  8. Serves 4.
