Lime Rickey

• 3/4 ounce fresh lime juice
• 1 ounce Simple Syrup
• 3 dashes of Angostura bitters
• Club soda
• Lime-peel spiral, for garnish

1. Build all the ingredients in a collins or iced-tea glass and top with soda.
2. Garnish with a spiral piece of lime peel.
