Curried Yogurt Dressing
- 1 tablespoon canola oil
- 1/4 cup onions finely chopped
- 1 clove garlic minced, or to taste
- 1 teaspoon ginger root finely grated
- 1/2 teaspoon curry powder or to taste
- 1 pinch salt and black pepper or to taste
- 1 pinch cumin ground, or to taste
- 2 tablespoons scallions, spring or green onions finely chopped, only green part
- 1/2 cup yogurt, plain
- 2 teaspoons lemon juice or to taste
- 2 tablespoons mint leaves freshly chopped
- In a small saucepan, heat up the oil over medium low heat, stir in onion and cook until dark golden, 3 to 5 minutes.
- Stir in garlic, ginger, curry powder, salt, pepper and cumin.
- Cook and stir for 40 seconds.
- Remove from heat, stir in green onions.
- Let cool for a minute.
- Stir in yogurt, lemon juice, then chopped mint.
- Refrigerate before serving.
