Basic Thickened Tomato Sauce Recipe
- Each pizza will need about 1/2 c. sauce. Sauce for 12 individual pizzas
- 6 Tbsp. extra virgin olive oil, divided use
- 6 x cloves garlic, lightly smashed
- 2 x (28-oz) cans whole plum tomatoes
- 4 Tbsp. tomato paste Salt and freshly grnd pepper to taste
- Hot 4 Tbsp.
- of oil with garlic in large skillet over medium-low heat.
- Cook, stirring occasionally, till garlic is lightly golden brown.
- Drain tomatoes; remove seeds if you choose.
- Crush tomatoes with a fork or possibly hands.
- Add in tomato paste to skillet, stir.
- Add in tomatoes, salt and pepper.
- Raise heat to medium-high and cook, stirring occasionally, till tomatoes break down and mix becomes sauce-like, about 10 min.
- Remove garlic if desired.
- Stir in remaining oil, adjust seasonings.
- Sauce can be made ahead and kept covered in refrigerator 1-2 days, or possibly frzn in closed containers.
