Basic Thickened Tomato Sauce Recipe

  1. Hot 4 Tbsp.
  2. of oil with garlic in large skillet over medium-low heat.
  3. Cook, stirring occasionally, till garlic is lightly golden brown.
  4. Drain tomatoes; remove seeds if you choose.
  5. Crush tomatoes with a fork or possibly hands.
  6. Add in tomato paste to skillet, stir.
  7. Add in tomatoes, salt and pepper.
  8. Raise heat to medium-high and cook, stirring occasionally, till tomatoes break down and mix becomes sauce-like, about 10 min.
  9. Remove garlic if desired.
  10. Stir in remaining oil, adjust seasonings.
  11. Sauce can be made ahead and kept covered in refrigerator 1-2 days, or possibly frzn in closed containers.
