Stew Meat Casserole
- 2 lb. beef stew
- 4 carrots, chopped
- 4 potatoes, chopped
- 1 lg. onion, chopped
- Salt and pepper, to taste
- 16 fl. oz. tomato juice
- 1 tbsp. tapioca pudding
- Place uncooked beef pieces in casserole.
- Add veggies.
- Pour tomato juice over to cover veggies.
- Sprinkle with tapioca, salt and pepper.
- Cover and bake at 325F degrees for 2-1/2 to 3 hours.
