Cricket's Savory Breakfast Cake

  1. Heat olive oil in a large cast-iron or nonstick skillet.
  2. Add onion and cook 2 minutes.
  3. Add potato, zucchini and broccoli.
  4. Cook, stirring frequently, until vegetables are tender.
  5. Add 1/2 teaspoon salt and pepper.
  6. Beat eggs in a bowl.
  7. Add remaining salt and pepper.
  8. Pour eggs over vegetables and toss.
  9. Cook 5 minutes over medium-high heat without stirring.
  10. Sprinkle with cheese and cover.
  11. Cook until cheese is melted and eggs are completely set.
  12. Cut into wedges.
