Tofu Muffins

  1. Blend tofu with a hand mixer until soft, then add the remaining ingredients starting from the top of the list, stirring after each addition.
  2. Fill muffin cups about 4/5 of the way, then bake for 20 minutes at 350F/180C.
  3. (Adjust the baking time to suit your oven.)
  4. They're done baking when a skewer inserted comes out clean.
