Tofu Muffins
- 100 grams Firm tofu
- 35 grams Sugar
- 1 Egg
- 1/4 tsp Salt (optional)
- 1 and 1/2 teaspoon Baking powder
- 60 grams Cake flour
- Blend tofu with a hand mixer until soft, then add the remaining ingredients starting from the top of the list, stirring after each addition.
- Fill muffin cups about 4/5 of the way, then bake for 20 minutes at 350F/180C.
- (Adjust the baking time to suit your oven.)
- They're done baking when a skewer inserted comes out clean.
