Spicy Pumpkin Bars
- 2 1/2 cups all-purpose flour
- 1 2/3 cups sugar
- 3/4 cup Land O Lakes Butter, softened
- 1/3 cup milk
- 1 1/4 teaspoons baking powder
- 1 1/4 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon pumpkin pie spice*
- 1/2 teaspoon ground cloves
- 2 Land O Lakes Eggs
- 1 (15-ounce) can pumpkin
- 4 cups powdered sugar
- 1/2 cup Land O Lakes Butter, softened
- 2 teaspoons vanilla
- 3 to 4 tablespoons milk
- 1/2 cup chopped pecans
- Heat oven to 350F.
- Combine all bar ingredients in bowl.
- Beat at medium speed, scraping bowl often, until well mixed.
- Pour batter into greased 15x10x1-inch baking pan.
- Bake 25-35 minutes or until bar springs back when touched lightly in center.
- Cool completely.
- Combine powdered sugar, butter and vanilla in bowl.
- Beat at medium speed, gradually adding enough milk and scraping bowl often, until desired spreading consistency.
- Stir in pecans.
- Frost cooled bars.
- Cut into bars.
- *Substitute 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon ground nutmeg and 1/8 teaspoon ground cloves.
