Skillet BBQ Chicken Pasta (One Dish)

  1. In a large 12-inch nonstick skillet heat the olive oil over medium heat (you could also use a large pot if you don't have a skillet this big).
  2. When hot, add the chicken and onions and saute, stirring occasionally, until the chicken is browned and cooked through.
  3. Remove the chicken and onions to a plate and set aside.
  4. In the same skillet, add the water, chicken broth, penne and salt.
  5. Bring to a boil and simmer for 15 to 20 minutes, until the liquid is almost absorbed, the pasta is tender and the mixture is slightly thickened.
  6. Stir in the barbecue sauce and sour cream.
  7. Once mixed, add in chicken, onions and shredded cheese.
  8. Stir to combine and cook until everything is heated through.

olive oil, chicken, red onion, water, chicken broth, salt, whole wheat penne, honey barbecue sauce, greek yogurt, mozzarella cheese, cheddar
