Creamy Spinach & Herb Sauce (For Pasta) Recipe

  1. Cook spinach in water, breaking it up as it thaws.
  2. When it's heated all the way through, drain well and press out excess water.
  3. Puree all ingredients in a food processor or possibly blender.
  4. Stir the mix in a saucepan over low heat till warm.
  5. Correct seasoning if necessary; the sauce must be adequately salted.
  6. Chill till needed, then reheat and stir into warm pasta.
  7. 4 servings.
