Protein Filled Chocolate Cookies
- 1 1/2 cup Chocolate whey protein powder
- 1 1/2 cup Coconut Flour
- 2 tbsp Chia Seeds
- 2 tbsp Stevia or other sweetener
- 2 each large eggs
- 2 tbsp Honey
- 1 1/3 cup 2% milk
- 1 1/2 cup peanut butter
- 1 1/2 cup Trail mix or nuts dried fruit, coconut, your choice!
- Add all dry ingredients together and mix well
- Next add eggs, honey, milk, and peanut butter (or other nut butter if preferred).
- Mix well.
- Finally, stir in the trail mix or nuts, dried fruit, etc.
- I used trail mix with dates, chocolate pieces, peanuts and cashews.
- Spoon approximately 3 tablespoons onto a baking sheet and bake on 325F for about 8 mins or until bottoms begin to brown.
- Approximately 13 grams of protein per cookie!
