Simple clam chowder
- 2 cup cubed russet potatoes
- 1 cup minced onion
- 1 clove minced garlic
- 1 cup diced celery
- 1 cup diced carrots
- 3/4 butter
- 3/4 flour
- 1 quart half and half cream
- 1 can smoked oysters in cotton seed oil
- 3 can minced clams
- 1 1/2 tsp salt
- 1/2 tsp crushed red pepper
- 1 pepper to taste
- Drain the juice from clams and oil from smoked oysters into a large pot over onions celery garlic potatoes and carrots.
- Add water just to cover and cook over medium heat until tender .
- Meanwhile in a large heavy saucepan melt the butter over medium heat.
- Wisk in flower until smooth.
- Wisk in cream and stir constantly until thick and smooth.
- Stir in vegetable with the water and juices they were cooked in.
- Heat through, but do not bring to boil.
- Stir in clams and oysters just before serving if they cook too much they get too tough!
- Season with salt and pepper and have crackers of your choice enjoy !
