Cranberry-Oatmeal Cookies
- 1 1/2 c. unsalted margarine, softened
- 1 3/4 c. packed brown sugar
- 2 large eggs
- 1 1/2 tsp. honey
- 2 tsp. vanilla
- 1/2 tsp. salt
- 2 c. unbleached all-purpose flour
- 1 (18 oz.) pkg. rolled oats (5 1/2 c.)
- 3 c. (12 oz.) coarsely chopped, fresh cranberries
- 1 1/4 c. coarsely chopped walnuts
- 1 Tbsp. finely shredded orange peel
- Grease or line baking sheet with parchment paper.
- In a large mixing bowl, beat margarine until smooth.
- Add sugar and beat until fluffy.
- Add eggs, honey, vanilla and salt; beat well.
- Add flour; beat until well mixed.
- Add oats and work with hands until well combined.
- Add cranberries, walnuts and orange peel.
- Stir well.
- Shape into ball the size of small egg.
- Place 3 inches apart on baking sheets.
- Press each ball into 3-inch rounds.
- Bake at 350u0b0 for 15 to 20 minutes or until desired doneness.
- Cool on wire racks.
- Makes approximately 30 cookies.
- Great for Christmas.
