Cowboy Casserole

  1. In a large heavy saucepan or Dutch oven, heat oil over medium-high heat.Add onion and garlic; cook until aromatic, about 1 minute.
  2. Add beef, breaking up with wooden spoon; cook until browned, about 5 minutes.
  3. Drain, if desired.
  4. Stir in chili powder, tomatoes, broth, canned beans, and frozen vegetables; bring to a boil.
  5. Stir in pasta; reduce heat, cover and simmer until pasta is tender, about 15 minutes.
