Chocolate Tapioca Pudding

  1. Combine sugar, tapioca and salt in saucepan; stir in milk and beaten egg.
  2. Let stand 5 minutes.
  3. Add chocolate and instant coffee.
  4. Cook and stir over medium heat until mixture comes to a full boil and chocolate is well blended, about 15 minutes.
  5. Remove from heat and stir in vanilla.
  6. Cool for 20 minutes, stir.
  7. Chill.
