Hot Potato Supremo
- 6 large potatoes Safeway 2 pkg For $5.00 thru 02/09
- 440g can corn kernels
- 1 large carrot, julienne
- 1/2 red capsicum, julienne
- 1/4 cabbage, shredded
- 3 spring onions, sliced
- 1/4 cup chopped parsley
- 1/3 cup KRAFT FREE* Coleslaw Dressing
- 125g tub PHILADELPHIA Light Spreadable Cream Cheese
- 1 cup salsa
- Cook the potatoes at 180C for 45-60 minutes or until tender.
- Combine corn, carrot, capsicum, cabbage, spring onions and parsley in a bowl.
- Add dressing and toss to coat.
- Cut potatoes in half and spread with Philly*.
- Top with coleslaw and a dollop of salsa.
- Serve immediately.
