Hot Potato Supremo

  1. Cook the potatoes at 180C for 45-60 minutes or until tender.
  2. Combine corn, carrot, capsicum, cabbage, spring onions and parsley in a bowl.
  3. Add dressing and toss to coat.
  4. Cut potatoes in half and spread with Philly*.
  5. Top with coleslaw and a dollop of salsa.
  6. Serve immediately.
