Sweet Potato Bisque
- 4 cups chicken broth
- 2 lbs sweet potatoes
- 1 acorn squash
- 1 onion
- 1 cup carrot
- 4 tablespoons nutmeg
- 1 tablespoon ginger-garlic paste
- 1 cup heavy cream
- Saute Onions.
- Cube Sweet Potatoes, Acorn Squash and Carrot.
- Add to Chicken Broth.
- Boil 25 min or until tender.
- Puree with immersion blender or in a food processor.
- Return to pot.
- Add nutmeg and Garlic Ginger Paste (I used garlic ginger paste because it's what i had on hand, I didn't realize I was out of ginger).
- Add heavy cream and heat thoroughly.
