Peanut Nasi Goreng

  1. Heat a little oil in a wok.
  2. Stir-fry shallot until tender.
  3. Add capsicum and corn, stir-fry until just tender, stir through rice, heat through and set aside.
  4. Reheat wok and brown the pork until still just pink.
  5. Add peanut butter, soy sauce and chilli.
  6. Fold through the rice mixture, and 3/4 of the choy sum and coriander.
  7. Serve in bowls garnished with the remaining choy sum and a fried egg.
