Citrusy Sweet Potatoes
- 10 -12 large sweet potatoes
- 4 tablespoons unsalted butter
- 2 cups apple cider
- 12 cup orange juice
- 1 orange, zest of
- 12 teaspoon cardamom
- 2 teaspoons cinnamon (to taste)
- 12 cup brown sugar
- 1 -2 cup chopped apple, of your choice (large chop)
- 1 cup raisins
- Preheat the oven to 400 degrees.
- Place the sweet potatoes on a large baking sheet and bake until they are just tender.
- They should be soft, but not mushy.
- Set them aside to cool before peeling and slicing them.
- To prepare the sauce, in a heavy saucepan, melt the butter.
- Add the cider, orange juice, orange zest, spices and sugar.
- Heat the mixture to steaming.
- Add the apples and raisins.
- Cook them gently in the liquid until the apples are tender and the juices are just slightly thickened and somewhat reduced.
- Spray a 13 X 9 inch baking dish with non-stick spray.
- Preheat the oven to 350 degrees.
- Peel and slice the sweet potatoes into 1/2 inch rounds.
- Place half of the potato slices in the bottom of the prepared dish.
- Cover them with half the sauce.
- Cover and bake until the potatoes are hot, about 45 minutes to one hour.
- Remove the cover after 30 minutes.
- If desired, baste the sweet potatoes with the sauce during baking.
